Forging process

This wok is made using the forging process, where the iron plate is shaped by hammering. The wok, created by thousands of hammer strikes, becomes more durable as the metal particles tighten. The surface of the wok has fine irregularities unique to the forging process, which allows oil to adhere better the more it is used. The areas struck by the hammer are finely adjusted by skilled artisans, resulting in a unique finish from YAMADA KOGYOSHO.

POINT 02

No preheating required, non-lacquered model

As a unique specification of KAMA-ASA, this model is non-lacquered and does not require preheating. Generally, YAMADA KOGYOSHO products are coated with a rust-preventive lacquer, which requires a preheating process to burn off the lacquer before first use. This product does not require that preheating, so you can use it immediately after oil seasoning.

High heat retention

With a thickness of 1.6mm, this wok is thicker than typical Chinese woks. The increased thickness not only enhances durability but also improves heat retention. Iron woks maintain high temperatures, making it less likely for ingredients to stick, thus effective even on home stoves with lower heat output.

How to choose a Chinese wok

POINT 01

Start by choosing the size

The first thing to decide is the size, not the thickness. If the wok is too small for the amount you want to cook, ingredients will spill out, and if it’s too large, it will be heavy to handle. For preparing main dishes for 2-3 people, a 30cm wok is recommended; for 1-2 people, a 24-27cm wok is ideal. Also, check if you can lift it comfortably with one hand. Once you decide on the size, you can choose the thickness.

Choose 1.6mm thickness for heat retention

The thicker the wok, the more heat it retains, making it less likely to lose temperature when ingredients are added. Many issues with food sticking to iron tools are due to temperature drops. The 1.6mm thickness has high heat retention, allowing for quick stir-frying while maintaining high temperatures, making it effective even on home stoves with limited heat output. For those who want to enjoy stir-frying, we recommend the 1.6mm thickness.

If weight is a concern, choose 1.2mm thickness

Iron Chinese woks are prone to rust if stored without use. If the weight is a burden and reduces usage frequency, the 1.2mm thickness is recommended. Even at 30cm, the 1.2mm thickness weighs about 940g compared to the 1.6mm thickness at approximately 1,300g. It is almost the same weight as the 1.6mm 27cm wok (about 1,000g), allowing you to handle a larger size. Since it becomes heavier with ingredients, it is also recommended for those who cook large quantities or are unsure about the action of tossing the wok.

  • The round bottom means it cannot be used on IH stoves. The handle will get hot, so please use mitts or towels to hold it. There may be scratches or stains from the manufacturing process, but this does not affect usage, so please understand. The hammer marks may vary, and we ask for your understanding of the product characteristics. Due to manufacturing reasons, there may be individual differences in size. Please note that we cannot accommodate specific size requests. Iron products may rust. As there is no Teflon coating, they may stick. Ingredients may turn black during initial use, which is due to iron carbide. It is safe to use as is. If concerned, please re-season. Please be sure to read the instruction manual before use.

Product quality

  • Due to the manufacturing process, there may be color variations and minor scratches. The surface irregularities are due to the unique forging process of YAMADA KOGYOSHO and are not considered product defects, so please understand in advance. The pot and handle are secured by welding, and there may be visible weld marks on some products.

Before first use

  • The products from YAMADA KOGYOSHO that we handle do not have rust-preventive lacquer, so no preheating is required. Please wash thoroughly with neutral detergent only during the first use. After washing, heat it to evaporate any moisture completely. Before use, please be sure to perform 'seasoning'. <Seasoning method> Pour a generous amount of oil into the wok and use vegetable scraps (like green onion tops or celery leaves) to stir-fry on low heat for about 5-10 minutes to ensure the oil coats the entire surface. *After seasoning, there may be black residue on the wok. This is carbon from the black iron and is not harmful. If concerned, please repeat the seasoning process.

How to care

  • After use, it is recommended to wash with only water or hot water and a brush, without using detergent. (Using detergent will remove the oil film that has adhered to the ironware.) Any residue left can cause corrosion, so please wash off dirt (burnt food, sauce, salt, etc.) thoroughly. *Please avoid using metal brushes as they can scratch the surface. Iron tools are very prone to rust, so after washing, please wipe off any moisture and be sure to perform 'preheating' (note) to evaporate moisture completely. *Do not heat for too long; just enough to dry. If only wiped dry, moisture may remain, leading to rust. Allow the pot to cool sufficiently and store it in a place with minimal moisture.
