Product Features
For slicing fruit and small foods
Like the Santoku and the chef's knife, a utility knife is a multi-purpose knife suitable for peeling and detailing. It has a relatively short, easy-to-handle blade. Very effective for fruit and peeling. For the main knife, a Santoku or chef's knife, and for the second knife, a utility knife is highly recommended.
VG10 Steel Known For Its Hardness and Long-Lasting Sharpness
VG10 steel, made with high-precision hardening technology, is characterized by its hardness and long-lasting sharpness.
Seven Key Features of amane
Professional-Grade Stainless Steel
The VG10 stainless steel used for the blade offers exceptional hardness, closely matching the toughness and resilience characteristic of carbon steel.
To maximize the potential of this superior material, amane tempers the steel without reducing its hardness, carefully and repeatedly correcting the warping that can easily occur in blades made of a single layer of steel.
After that, the blade is meticulously hand-thinned using a whetstone. Every step requires a high level of skill, and each knife embodies authentic craftsmanship.
Smooth Cutting Feel with a Convex Edge
Featuring a convex edge, also called hamaguri ("clam shell" in Japanese), the blade's face gradually thins and curves smoothly toward the edge. This quality creates minimal resistance, offering an exceptional, long-lasting cutting feel.
Designed for long-term use, it achieves both effortless cutting and excellent food-release properties.
Tailored Edge & Easy-to-Sharpen Construction
The blade features a 7:3 bevel, meticulously angled for left-handed users. Crafted from a single piece of steel, this knife gives the user the freedom to customize the edge over time. For instance, you can sharpen it into a nearly single-bevel shape for an even sharper edge or keep it double-beveled. Due to the extra steps taken in the manufacturing process to eliminate warping, these knives offer a stable, consistent sharpening experience even after years of use.
Meticulously Crafted, Comfortable Handle
In pursuit of exceptional comfort, each handle is meticulously polished over and over by hand to eliminate any gaps between the metal and wood. The result is a smooth, rounded, and lustrous finish that feels comfortable in the hand. This means long hours of stress-free use without strain, and is also highly recommended for those with smaller hands. While it's a subtle detail you may only notice the moment you hold it, this handle is crafted with thoughtful care for the user.
Hygienic and Durable Stainless Steel Bolster
The bolster between the blade and handle adds an extra layer of protection, so water is less likely to seep inside. As a result, the knife is more hygienic, damage-resistant, and durable. Additionally, the bolster is made of rust-resistant stainless steel, which prevents the adherence of stains and dirt.
Etched with KAMA-ASA's logo
The logo on the back of the blade is a testament to our commitment to originality. It signifies a knife made with dedication that can only be found at KAMA-ASA.

Most of the chipping can be repaired by re-sharpening the blade. We offer a fee-based knife sharpening service. If you have any questions, please feel free to ask us using the inquiry form. Blades can chip by cutting hard ingredients such as bones, seeds or frozen food, dropping and mishandling, or stabbing into hard cutting boards.
All knives we handle can be repaired with the exception of knives that are severely damaged. Repairing chipping and removing rust will restore sharpness and allow you to use your knives for a longer period of time. We also offer a fee-based knife sharpening service.
Please note we may not be able to repair knives with unknown blade materials, such as knives purchased at other stores.
