YOSHIKANE HAMONO, carrying on the Sanjo blacksmithing tradition

YOSHIKANE HAMONO is a cutlery maker founded in 1919 (Taisho 8) by its first-generation founder Kinkichi Yoshida in Sanjo City, Niigata Prefecture.

Today, the fourth-generation Kazuomi Yamamoto carries on the Sanjo blacksmithing techniques that have continued since ancient times, crafting each knife one by one while cherishing traditional methods.

Another distinctive feature is that everything from forging to edge-setting and finishing is carried out in-house.

POINT 02

Universal knife used in Japan since ancient times.

A long-standing Japanese knife also known as a vegetable knife. The blade is long and parallel to the board. Like the Santoku, the most common cutting action is to lift the knife up and down, but the blade is not rounded. It can be used as a main knife instead of the Santoku or chef's knife.

POINT 03

White #2 Steel with a Kurouchi Finish

The core is made from White #2 steel, known for its sharp cutting performance and ease of sharpening.

The black kurouchi surface is not colored or coated; it is the natural oxide layer formed during the forging and heat-treatment process.

This traditional finish offers the sharpness and ease of sharpening characteristic of carbon steel knives, along with a distinctive, traditional appearance.

POINT 01

In-House Production

To create a single knife, it must go through many manual processes. At Yoshikane Hamono, we consistently carry out all processes in-house, from forging to shaping, heat treatment, finishing, engraving, and packaging, while adhering to the traditional methods of Sanjo blacksmithing. This is why each knife has its own personality and becomes a tool that fits comfortably in the user's hand.

POINT 02

Blade Release Feel (Tip and Flat Shape)

The delicate blade tip tapers towards the point, providing the sharpness of a single bevel knife. The part called 'Hira' above the shinogi has a slight 'suki' (gap), and its exquisite curve creates a smooth cutting experience when slicing ingredients. Each knife undergoes careful distortion removal, ensuring the blade's core remains stable. Even though it is thin, it does not feel unstable, allowing for confident cutting. The unique 'release feel' of Yoshikane knives is born from this meticulous craftsmanship.

Keyaki Handle

Keyaki is a wood that has been close to the lives of Japanese people since ancient times. It is used in tools that endure strong forces, such as the bodies of taiko drums and wooden mortars for pounding rice. Its durability, resilience, and resistance to cracking make it an attractive material. Over time, it becomes familiar to the hand and deepens in color and luster. Its strength and beauty make it suitable for knife handles.

Half-Round Handle Shape

The handle adopts a half-round shape. The upper part that touches the palm is designed with corners for a firm grip, while the lower part that touches the fingers is rounded for a gentle fit. The feel of the hard wood, infused with the warmth of craftsmanship, reflects the dedication of Kaneko Sogyo.

Kazutomi Yamamoto of Yoshikane Hamono values traditional blacksmithing while also positively embracing new techniques. It is standard for Sanjo blacksmiths to carry out everything from forging to sharpening in-house. This is why the precision of the blade and the quality of the finish remain consistent. Yoshikane Hamono knives embody this "strength of consistent craftsmanship."

KANEKO SOUGYOU

KANEKO SOUGYOU, based in Sanjo, Niigata Prefecture, carefully rounds the corners after machining and polishes each piece by hand. "Since the blade has a sharp metallic impression, I want the handle, which directly touches the hand, to emphasize softness and comfort," they say. True to their words, the kindness conveyed upon touch carries a delicate sensibility.

FAQ

Yes, but for online orders, we offer a free engraving service for knives only. Please select the desired engraving option, enter text and add the knife to cart. Engraving for products other than knives is only available at our physical store at Kappabashi, Tokyo.

Most of the chipping can be repaired by re-sharpening the blade. We offer a fee-based knife sharpening service. If you have any questions, please feel free to ask us using the inquiry form. Blades can chip by cutting hard ingredients such as bones, seeds or frozen food, dropping and mishandling, or stabbing into hard cutting boards.

All knives we handle can be repaired with the exception of knives that are severely damaged. Repairing chipping and removing rust will restore sharpness and allow you to use your knives for a longer period of time. We also offer a fee-based knife sharpening service.
Please note we may not be able to repair knives with unknown blade materials, such as knives purchased at other stores.
