All-purpose knife widely used in Japan
A versatile knife that can be used for meat, fish and vegetables. Its shape is a combination of the Nakiri knife traditionally used in Japan, and the chef's knife used in the West as a multi-purpose knife. The upper half of the blade is rounded like a chef's knife, and the lower part of the knife is straight like a Nakiri. The most common cutting gesture is to lift the knife from top to bottom. That's why you hear “ton,ton,ton” in Japanese kitchens.

While honoring these time-honored techniques, they create knives that are easy to use at home, bringing greater enjoyment to everyday cooking.
In-House Production from Start to Finish
One of MASUTANI HAMONO’s defining features is that every step of the process is carried out in-house.
This allows for strict quality control and consistently high standards, while also making it possible to offer knives that are both easy to use and accessible in price.
Consistently High-Quality Blades
These knives are crafted using a salt bath heat treatment, which allows the entire blade to be evenly hardened.
This process minimizes variations in hardness, distortion, and the risk of cracking, resulting in a consistently high-quality blade.
Because only a limited number of blades can be treated at once and the post-treatment process is labor-intensive, this method is not suited to mass production.
It is one of the defining characteristics of Echizen craftsmanship, where production systems have evolved while preserving traditional techniques.

FAQ
Yes, but for online orders, we offer a free engraving service for knives only. Please select the desired engraving option, enter text and add the knife to cart. Engraving for products other than knives is only available at our physical store at Kappabashi, Tokyo.
Most of the chipping can be repaired by re-sharpening the blade. We offer a fee-based knife sharpening service. If you have any questions, please feel free to ask us using the inquiry form. Blades can chip by cutting hard ingredients such as bones, seeds or frozen food, dropping and mishandling, or stabbing into hard cutting boards.
All knives we handle can be repaired with the exception of knives that are severely damaged. Repairing chipping and removing rust will restore sharpness and allow you to use your knives for a longer period of time. We also offer a fee-based knife sharpening service.
Please note we may not be able to repair knives with unknown blade materials, such as knives purchased at other stores.
