Nambu ironware, one of Japan's representative

Nanbu ironware is a traditional craft of Iwate Prefecture, and its most famous product is the iron kettle, a traditional tool used exclusively for boiling water.
It is said that water boiled in an iron kettle has a mellow taste, and goes well not only as hot water, but also with tea and coffee.
In addition, the iron in the iron kettle dissolves into the hot water as divalent iron, which is easily absorbed by the body. It is said to help with daily iron replenishment.

POINT 02

Produced at Suzuki Shuzendo, a workshop that has been in operation since the Edo period

All of the iron kettles sold at Kamaasa Shoten are made by Suzuki Shuzendo, a workshop in Morioka city, Iwate prefecture.
Suzuki Shuzendo was founded in 1616 (Genwa 2) when the first generation Suzuki Chubei was employed as a foundry worker by the Morioka Nanbu Domain.
The name Chubei has been passed down for 400 years since then, and as of 2024, it is still in its 13th generation.
Currently, various Nambu ironware products, including iron kettles, are manufactured under the direction of traditional craftsman Ito Ikuo.
The iron kettles made by Suzuki Shuzendo are engraved with the name "Chubei." This is proof that they have been passed down for generations and is also proof of their quality.

A finish that only Chubei can provide

The greatest feature of iron kettles is the kiln firing (metal fitting), which is done carefully one by one using traditional charcoal to match the casting finish of the time.
This is said to result in a more even finish and make the water smoother.
The spout uses a traditional mold that has been handed down for a long time, and is further finished by hand to make pouring easy and less likely to drip.
The coloring is a unique mixture of lacquer and iron powder, giving it a slightly brownish look that is unique to Chubei.

Notes

  • Be careful not to get burned as it is hot. The lid in particular is very hot, so do not touch it with bare hands and use a cloth or similar.
    Be careful of hot water and steam.
  • When using on an induction cooktop, be careful with the temperature adjustment. Raising the temperature suddenly may cause the product to deform.
  • Cast iron products may rust depending on how they are used.
  • There may be slight individual differences in size.

Before first use

  • Breaking in
    Repeat the process of boiling and discarding water 2-3 times. When the water becomes clear, it is ready to use.
    If the water is cloudy or has an iron smell, try soaking it again.

How to boil water

  • Boil the water slowly. For gas stoves, make sure the flame does not come out from the bottom, and for induction stoves, use low heat.
    Please be aware that if you boil an induction cooktop over high heat, the temperature will rise rapidly and deformation may occur.
  • *The amount of hot water should be about 80%. If you fill it up to the top, it will boil over when it comes to a boil.
    *Since cast iron kettles are used to keep water boiling, please keep boiling it until you have finished using it.

Care Instructions

  • After use
    Open the lid and pour the water into another container or discard it while it is still hot. This will allow the water to dry out using the heat of the iron kettle itself.
    Once it is completely dry, you can leave it as it is, but if there is still moisture remaining, immediately turn it on the stove and dry it. Never use high heat, but dry it slowly over low heat.
    Once the water has evaporated, turn off the stove immediately. The heat will also dry the lid, but if it is not completely dry, wipe off the water with a dry cloth.
    The spout and lid are prone to collecting water, so be sure to wipe them dry.
  • About cleaning
    *Since iron kettles are used to boil water, there is no need to wash them. Do not wash them with detergent or other cleaning agents. Washing them may cause rust.
    *In particular, do not use detergent on the inside, nor do you ever touch it directly or clean it with a scrubbing brush or sponge.
  • When not in use
    If you are not going to use it for a long time, wrap it in paper such as newspaper and store it in a place with low humidity. Check it occasionally and replace the paper.
    *Please store in a completely dry place. Do not store in a plastic bag as it will cause the product to become damp.

FAQ

  • Why not boil tea?
    Since iron kettles use iron itself to boil water, the iron reacts with the tannins in the tea, causing the tea to discolor.
    In addition, due to the characteristics of the product, it cannot be washed, so please do not boil tea directly in it, as tea components may remain and lead to the growth of mold or bacteria.
  • Can I supplement iron?
    Water boiled in an iron kettle contains a type of iron called ferrous iron. Therefore, it is believed that drinking water boiled in an iron kettle will replenish your iron intake.
    However, please understand that this is merely a supplementary measure and will not improve your physical condition or make you healthier.
    Also, please be aware that if you use it in tea or coffee, it may inhibit the absorption of iron.
  • Will the handle fall off?
    The handle of the iron kettle is fixed so it will not fall over. Please be careful not to force it over as it will not be repairable.
  • Can it be repaired?

Troubleshooting

  • Red spots have appeared on the inside of the iron kettle...
    At first glance it may look like rust, but unless the hot water has discolored or has an iron smell, it is not rust.
    This can occur depending on the water quality in the area you use it in. This is proof that the iron kettle is growing, so please continue using it.
  • A white lump has formed in the iron kettle...
    This is called scale and is a crystallization of calcium and magnesium in water. When this adheres to the surface, it helps prevent rust.
    This is proof that the iron kettle is growing well. Please do not remove it under any circumstances.
  • It's rusted...
    No matter how carefully you use it, it may rust.
    If the kettle does rust, do not rub it. If it is inside the kettle, use a tea bag or something similar to boil tea in the kettle for a while. When doing so, be sure to add water frequently to avoid boiling the kettle dry.
    The tea turns black because the tannins in the tea react with the iron, causing the color to change. This action prevents the iron from rusting.
    Boil for 20-30 minutes, then discard the contents. Repeat the process of boiling and discarding the contents until the water becomes clear.
    If the water becomes clear and the iron smell disappears, the rust removal is complete. If there is no improvement, please repeat the process.
  • I ended up firing it empty...
    If you have boiled the kettle dry, turn off the stove immediately. And do not pour water on it, just wait until it cools down. Once the kettle has completely cooled, rinse the inside and clean it.
    When doing so, do not touch or rub the inside.
    Then boil water, and if the water does not have a metallic smell, you can use it as is.
