Forging process

It is made using the forging method, where the iron plate is shaped by hammering. The pot, created by thousands of hammer strikes, becomes sturdier as the metal particles tighten. The pot's surface features fine irregularities unique to the forging process, which allow oil to adhere better with use. The areas struck by the hammer are finely adjusted by skilled artisans, resulting in a unique finish from YAMADA KOGYOSHO.

POINT 02

No preheating required, non-lacquered model

KAMA-ASA adopts a unique specification that does not require pre-seasoning. Generally, YAMADA KOGYOSHO products are coated with a rust-preventive varnish, requiring a pre-seasoning process to burn off the varnish before first use. This product does not require such pre-seasoning, allowing you to use it immediately after oil seasoning.

High heat retention

With a thickness of 1.2mm, it is thicker than typical Chinese woks. The increased thickness not only makes it sturdier but also enhances its heat retention. Iron woks maintain high temperatures, making it less likely for ingredients to stick, thus effective even on home stoves with lower heat output. Compared to the 1.6mm thick type, heat retention is slightly lower, but it is recommended for those looking for a lighter wok.

How to choose a Chinese wok

POINT 01

Start by choosing the size

The first thing to decide is the size, not the thickness. If the wok is too small for the amount you want to cook, ingredients will spill out, and if it's too large, it will be heavy to handle. For preparing main dishes for 2-3 people, a 30cm wok is recommended, while for 1-2 people, a 24-27cm wok is ideal. Also, check if it is light enough to lift with one hand without strain. Once you decide on the size, you can choose the thickness.

If choosing for heat retention, go for 1.6mm thickness

The thicker the wok, the better it retains heat, making it less likely for the temperature to drop when ingredients are added. Many issues with food sticking to iron tools stem from temperature drops. The 1.6mm thickness offers high heat retention, allowing for quick stir-frying while maintaining high temperatures, making it effective even on home stoves with limited heat output. For those who want to enjoy stir-frying thoroughly, the 1.6mm thickness is recommended.

POINT 03

If weight is a concern, choose 1.2mm thickness

Iron Chinese woks are prone to rust if stored without use. If the weight becomes a burden and reduces usage frequency, the 1.2mm thickness is recommended. Even at 30cm, the 1.2mm thickness weighs about 940g compared to the 1.6mm thickness at approximately 1,300g. It has a similar weight to the 27cm 1.6mm thickness (about 1,000g), allowing you to handle a larger size. Since it becomes heavier with ingredients, it is also recommended for those who cook in larger quantities or have concerns about the motion of tossing the wok.

  • Due to the round bottom, it cannot be used on IH stoves. The handle will become hot, so please use mitts or towels when handling. There may be scratches or stains from the manufacturing process, but they do not affect usability, so please understand. The hammer marks may vary, and we ask for your understanding of the product's characteristics. Please note that there may be individual differences in size due to manufacturing. Specific size requests cannot be accommodated. As it is an iron product, it may rust. It is not Teflon-coated, so it may stick. Ingredients may turn black during initial use due to iron carbides. This is harmless, and you can use it as is. If concerned, please re-season. Please be sure to read the instruction manual before use.

Regarding product quality

  • Due to the manufacturing process, there may be color variations and minor scratches. The surface irregularities are due to the unique forging method of Yamada Kogyo and are not defects, so please understand in advance. The pot and handle are secured by welding, and there may be visible weld marks on some products.

Before first use

  • The products from Yamada Kogyo that we handle do not have rust-preventive lacquer applied, so preheating is not necessary. Please wash thoroughly with neutral detergent only during the first use. After washing, heat it to evaporate all moisture. Before use, please be sure to 'season' it. <Seasoning method> Pour a generous amount of oil into the wok and use vegetable scraps (like green onion tops or celery leaves) to evenly coat the surface with oil over low heat for about 5-10 minutes. *After seasoning, there may be black residue on the wok. This is carbon from the black iron and is not harmful. If concerned, please season again.

How to care

  • After use, we recommend washing with only water or hot water and a brush, without detergent. (Using detergent will remove the oil coating that has adhered to the ironware.) If there are residues left, they can cause corrosion, so please wash off any dirt (burnt food, sauces, salt, etc.) thoroughly. *Avoid using metal brushes as they can scratch the surface. Iron tools are very prone to rust, so after washing, please wipe off any moisture and be sure to perform a 'preheating' to properly evaporate moisture. *Do not heat for too long, just enough to dry. If you only wipe it dry, moisture may remain, leading to rust. Allow the wok to cool sufficiently and store it in a place with as little moisture as possible.
