The company was founded in the Edo period (1603-1868). As the head family of Echigo Wood Shears, Mr. Tatsumatsu I (named "Tatsumatsu"), Mr. Tomijiro II (named "Chinryu"), Mr. Hideyoshi III (named "Ryuzan"), and Mr. Hidehisa IV (named "Hidehisa") have passed down the tradition to generations in Sanjo, the city of hardware.
About this tool
Pruning shears to cut food beautifully
Pruning shears were originally gardening shears for use with plants, bonsai, and fresh flowers.
But we focused on the blade structure like a single-edged kitchen knife and the razor-sharpness of the forging process.
For hard foods
By attaching a small blade to the pruning shears, we have improved the bite of hard foods such as meat and fish bone cutters.
The sharpness of the cut and the beauty of the cross section, as if cut with a Japanese knife, are also features of these shears.

Precautions
- Please note that plastic string, wire, plastic bags, cloth, paper, etc. cannot be cut.
- Do not cut ice or frozen foods as this may cause "chipping."
- When using new shears, do not cut thick bones at first, but start with soft, thin bones and let the blade get used to them.
- Before use, make sure that there is nothing wrong with the blade and that the bolts and nuts are not loose to ensure safety.
- The product is delivered with lubricant pointed to the bolt and nut portion.
- Rust may occur if moisture or dirt remains on the surface.
- The blade is extremely sharp. Please be careful not to injure yourself by tracing the blade with your bare hands when handling it.
- Please do not remove the bolts when cleaning, etc.
- Bone cutting should be up to 10 mm. (Small shears up to 5 mm)
- The back side of the blade is finely tuned and delicate. Please do not touch it for cleaning, etc.
- Dishwasher safe.

If the blade is chipped
- Continued use of a chipped blade may cause the chipping to become even more severe and may not be repairable. Discontinue use when chipping is detected.

Proper way to hold shears

- The index finger is not placed in the ring, but is placed in front of the ring.
This will stabilize the shears and make it easier to do detailed work. - Hold the bolt caulking down where the blades cross, with the one that turns with the blade up.
Care Instructions
- After use, wipe off any dirt on the body (especially on the blade) and store it carefully.
- Lubricate stopper parts, bolt nuts and caulking parts regularly.
- After use, rinse and dry gently with a dry cloth. To prevent rusting, dry the shears in the open position and do not allow water to collect in the joints.
- Please refrain from disassembling the product yourself, as a special tool is required to open and close the screws.
- Please apply lubricant (such as camellia oil) to stopper parts, bolt nuts and caulking parts on a regular basis.
